Pre-heat oven to 350⁰ degrees F, fan forced.
Using a stand mixer, beat the eggs and vanilla until thick and creamy.
Place the chocolate, butter and coffee in a microwave safe bowl and heat in bursts until
melted and smooth.
Add the chocolate mixture to the eggs, beating on low until combined.
Fold the dry ingredients (almond flour and sweetener) through until well incorporated.
Grease two single-serve 1 cup ramekins very well. Pour the batter into the two ramekins and bake for 10-15 minutes until the top has set but still jiggles. (Cooking time will depend on the size and shape of your ramekin)
Sit aside for five minutes before upturning in a serving plate.
Serve with cream and berries, if desired
These Lava Cakes will need to be eaten straight away and do not store well.
