Crock Pot Garlic Parmesan Drumsticks (Low Carb, Gluten Free)
This fabulous, plentiful chicken recipe is made in the slow cooker for an easy weeknight meal!
It's Back to School season and I'm a busy mother of three who homeschools and works at home. I have worked outside of the home as a school teacher and now I work in the home. I have to say that working at home is much harder for me. Not only do I have the duties of school teacher to my kids, I have deadlines for client work that needs to get done, blog work, a crazy inbox of emails I can never get down under 8; and with a 15 year old son who is eating me out of house and home, I am just trying to keep up with the needs of my family.
Often I make large meals for the sole purpose of that 15 year old I just mentioned and for the hopefulness of having some left overs for lunch the next day.
I've said it before and I will say it again, having partnered with FitFluential and Kohl's these last few months for their #makeyourmove campaign has truly made me think more intently on my time and my efficiency, especially in the kitchen.
I have always been a lover of the crock pot as a time saver. But I've never had a fancy one. I've had the same one since I got married 18 years ago. I needed a new one in my life. One with a timer that would stop cooking at the right time so it wouldn't dry out the food, one that was easy to carry to friends and family, and when I saw this one below at Kohl's I grabbed it!
Isn't she a beauty? I mean 3 modes!!! Manual setting, Program setting with timer and Probe setting for inserting a thermometer so it stops cooking when it reaches the right temp!! Oh my; the JOY!!
No need to uncover and stop the cooking that is happening under the cover when there's this perfect little hole for inserting the thermometer!
Once your meal is done, you can leave it in there and use the handles to lock the cover in place while you travel!!
This is going to make my life so much easier! And this recipe is going to make your life so much happier when you see the smiles on your families' faces while they eat this amazingly tender chicken!
The #makeyourmove campaign is just really about how you can find more time for the things you love to do with those you love to do them with.
Getting outside for a walk after dinner, walking the dog, making time in the day to read for 15 minutes to nourish your soul, getting to the gym at the crack of dawn to work out (because as a busy mom that's the only time you may have like me), whatever it is that encourages you to #makeyourmove, don't wait, seize the day and make the most of your time!
Let this meal be one that will help you do just that!

What if I don't have olive oil, I just have vegetable oil.
Can I use that??
I made this yesterday with a combination of 1.5lbs boneless, skinless chicken thighs as well as 2 huge chicken leg quarters. I also used water instead of chicken broth (didn't have any on hand), and dumped in an 8oz container of sliced white mushrooms.
WOW! Sooooo good! The meat completely fell off the bones and was incredibly juicy and tender.
I'll 100% be making this again, probably next week.
I love this recipe but only have thighs on hand. Has anyone tried this with thighs? Also my chicken isn’t fully defrosted yet, I was going to try to just bake it later. Could I basically follow the same steps? ( minus cooking time obviously)
I think this would be delicious using thighs and yes just follow the same steps to bake instead.
Would it be fine, or would the chicken turn out dryer if I used boneless?
I'd cook it a lot less in boneless.
Looks delicious! I very much appreciate the nutrition information as well! Could you clarify how much a serving is for this please??
the serving size is in weight, 6.5 ounces.
So all my chicken is not summerged in the broth should I add more
It should be fine to not have it all submerged.
I made these tonight in my instant pot (Farberware brand) on the chicken setting. When it was done I released the pressure manually. I took them out and put them on a cookie sheet and broiled them on each side for 3 to 4 minutes to crisp up the skin. I brushed on the butter garlic mixture a couple of times. When they were crispy I removed them from the oven and put them on a plate. And dumped the rest of the butter mixture on top of them. Yum! This chicken was so tender and so yummy! I'll definitely make them again. Dinner done and 30 minutes!
Is there an option to cook this on low?
Sure but it will take a 3-4 hours more.
This recipe was delicious. Only change I will make next time is taking the skin off the chicken before cooking. We don't eat the skin and there was a lot of flavor stuck on there! Thanks for the great recipe!
Isn't the juice you add at the end contaminated by rolling raw chicken around in it?
Ah no. The remaining ingredients as the per the directions are poured over the chicken which are butter, lemon juice, garlic and parmesan.
Ohhhh sorry I read the directions wrong! Looks delicious... you think it would turn out ok to leave it on low for 8 hours while I'm at work? Thanks!
If I used frozen chicken, how would I adjust the cooking time or temp?
It would probably increase the time by 4-6 hours, although I'm not sure as I've not attempted it with frozen drumsticks.
Low or high?
Directions say high 4 hours.
Is this recipe to be used with a 6 quart slow cooker?
I believe this one is 8 quart.
I'm confused by this recipe, so before you serve you whisk together the butter, minced garlic and lemon juice? So you're putting raw garlic on them before you serve?
Yes but if you don't like raw garlic just replace with garlic powder. Raw garlic and onions go in dressings all the time.
When you get ready to serve the drumsticks you take them out of the broth and pour the lemon juice, minced garlic, parmesan and parsley mixture over them?
This recipe was delicious !!. I tried it by removing the skin before cooking (easier to remove with a paper towel), It was so good, I'm making it again for Thanksgiving. Thank you for sharing !
So glad you liked it!
Would this recipe work with boneless thighs?
I tried this recipe tonight and it was very delicious. I will definitely be keeping this recipe handy for more future crock pot cooking.
thank you for sharing!
They look delicious! And I need more slow cooker recipes with fall events filling up my schedule - no time to cook!

What a cool slow cooker! I love the thermometer feature.
This looks delicious and it's great that you're left with leftovers. I always have to laugh at posts written by mothers of teenaged boys.. They sound ravenous. 😉

I use my slow cooker more than any other small appliance in my kitchen! It's so nice to put something on to cook and come back hours later to find it all ready for you. No watching, no stirring, no tending. This recipe sounds perfect for a busy family!
I love the idea of the hole to stick the thermometer through! This looks like a great recipe to feed a houseful of growing kids and hungry adults.
I need this crockpot for our camper. I had one and gave it away, and now I need one again! This chicken looks great too!
I get so excited when it's time to take out my crockpot...usually right around when school starts up again! I like this crockpot...wish mine wasn't new, or I'd try it out! Great and flavorful chicken recipe!

I swear, crockpots are such a lifesaver during the busy school year (I have this one!). Garlic and parmesan are favorite flavors in my household, so these are definitely going on the menu soon.

I've been thinking about getting this slow cooker. I have one of their older stay or go versions but I really love that probe option!
