Low Carb Patriotic Dessert Pizza is Keto, Gluten Free and Grain Free!
Low Carb Dessert Pizza
This recipe has been on my Foodie To Do List for a long time! Every since I made this gluten free 4th of July Pizza a couple of years ago, I knew a Low Carb Keto Dessert Pizza version needed to happen. Using my Low Carb Vanilla Wafers for the crust I knew this would be a big hit with everyone and I was right!
Being that the month of June has just flown by me, I realized 4th of July was quickly approaching! Two Weeks to be in fact! Thankfully we’ve finished up school and most weekly activities for the kids that consumed our days.
I’m hoping to start actually enjoying some down time with my family where we actually have a day to stay home and do nothing!
Doing nothing to me means reading a book and putting my feet up!
Doing nothing to my kids means having no school, having friends over, going in the pool and eating fun treats like this pizza!
I used the recent invite for my daughter to head to a friends pool party, to make this low carb cookie dessert pizza to share with others.
“Others” meaning not friends who eat sugar-free.
I always like to do that. I like to hear what they thought of something they don’t normally eat.
I heard rave reviews!
My friend told me her hubby loved it so much he wanted to write me a thank you note!
Low Carb Fruit Dessert Pizza
You can really use whatever fruit you want on this dessert pizza. I chose lower carb fruits like raspberry and blueberries but even strawberries or blackberries would also be good. Trying to keep to the Red, White and Blue theme for 4th of July is always a festive dessert to bring to a party or cookout.
Sugar Free Butter Cream Frosting
You can choose one of two frosting options I have. I used my Sugar Free Cream Cheese Frosting in this recipe and added those ingredients below but feel free to use this Sugar Free Buttercream Frosting, really either would hold up well. One note though is the cream cheese one will need to stay refrigerated before serving, especially in the heat of summer.
Make the crust, bake, cool, make the frosting, add the berries to decorate and you’re done. I also opted to preslice pieces to make it easier for the kids to grab.

Brenda’s Notes:
- The vanilla wafer recipes calls for the cookies to be made into a roll shape and refrigerated in order to slice them before baking. In this recipe that step is eliminated. Just prepare the dough and spread it onto the pan and bake.
- You can use any sweetener of choice that equals about 1/2 cup of sugar. Taste and adjust to your preference.
- Strawberries sliced in half is also another option if you don’t like raspberries.
- This recipe was first published in June of 2016 and updated in June of 2018 with a video.

Low Carb Patriotic Dessert Pizza (Grain Free)
Ingredients
- use my entire recipe for vanilla wafers
- 2 ounces cream cheese
- 8 ounces heavy cream
- 1 tsp vanilla extract
- 1 tsp vanilla liquid stevia
- 4 ounces fresh blueberries
- 12 ounces fresh raspberries
Instructions

Preheat oven to 350 degrees F.

Prepare my vanilla wafer cookie recipe and rather than turn into a roll for slicing cookies, spread onto a baking pan lined with parchment. My rectangle shape measured 8 by 12.

Bake for 12-14 minutes or until golden brown. Allow to cool completely.

Place the cream cheese, heavy cream, vanilla extract and stevia in a stand mixer and blend on high until the consistency is that of frosting.

Spread evenly over cooled cookie.

Arrange blueberries in the left corner. I made 5 rows across, with 8 berries in each row.

Arrange 5 rows of raspberries across cookie.

Slice and serve or keep refrigerated until ready to serve.

Ohh since it’s berry season here as well I’m totally enjoying my berries at the moment! And they are crazy cheap. I might try and make this one myself!
I’m fairly new to your site, so forgive me if I’m asking a stupid question. Why are you using both liquid & granulated sweetener in the cookie dough recipe? Not challenging you or your method; I’m curious because I really don’t know why.
No worries I don’t mind answering my reasons. I love using both as they cancel out each other in most recipes. Swerve seems to cause a cooling effect and stevia can sometimes have on aftertaste, at least when either are used on their own in recipes. When combined it creates a perfect combo, no aftertaste ever!
is it really only 2 oz of cream cheese?
Yes to mix with the heavy cream and spread over the cooked cookie pizza once cooled.
I also question just two ounces of cream cheese with EIGHT ounces of heavy cream. I just mixed these and now have soup. In the beginning of this recipe, you mentioned you used your sugar-free buttercream frosting for this dessert pizza.. But that buttercream recipe shows 1 1/2 CUPS cream cheese, which I assume is 12 ounces of cream cheese, and only 3 tablespoons heavy cream. I wanted this for tomorrow but I don’t know what to do now, unless I add the remaining six ounces of cream cheese to get this to thicken, throw in a mess of regular powdered sugar, or simply find another recipe. Fortunately, those whom are supposed to be eating this aren’t diabetic, so I can use regular powdered sugar.
I tested the amount of cream cheese from my original cream cheese frosting and proved to be too thick to spread. I reduced it and it was easily spreadable. That’s the amount you see in my recipe. Others have made this with great success. Hopefully you put the mixture overnight in the fridge which would have thickened it anyway and some more time blending in a mixer should produce the whipped texture. Feel free to try adding 2 more ounces of cream cheese.
My mistake…I misquoted the wrong recipe. It was your cream cheese frosting that shows 1-1/2 cups cream cheese and 3 Tbsp heavy cream…not the buttercream frosting. However, that doesn’t change my dilemma.
Made this today & it turned out beautifully! I love the frosting because it’s nice & light to complement the berries. Will definitely be making the cookies too sometime for other things! Thank you for a great recipe!
This was fantastic! I very rarely enjoy items made with only coconut flour but you hit this out of the park. I totally planned to tweak it and add some almond flour but it tasted fabulous as is❤. I used pyure sweetener and adjusted it to 1/4 cup. Thank you sooo much. Can’t wait to try some of your other recipes.

My whole family enjoyed this! I like how the “frosting”, which basically reminds me of whipped cream for desserts, is not overly. sweet – the cream cheese was barely noticeable, but it all tasted good. Thank you for these ideas!
How much stevia do you use if you’re using regular stevia?
This was amazing. My husband is allergic to coconut, so I substituted oat fiber for coconut flour, and it turned out great.
