This Beautiful Salad has all the ingredients you'd find in a fresh spring roll and it's topped with the most luscious sugar-free sweet peanut dressing you've ever had!
When it comes to scrumptious salads, I love them all! I enjoy salads all year through no matter the weather or season. But let's face it, sometimes salads can get boring and uninteresting and certainly less exciting that a hot meal.
Changing up the ordinary salad to include some fresh ingredients that are often found in a fresh spring roll, is what I'm bringing you today. This recipe makes for a perfect salad to bring to a cook out or party with all your friends asking for the recipe, especially the creamy sweet but sugar-free peanuty dressing!
Honestly more than anything, a dressing can make a break a great salad. Todays dressing is anything but ordinary and something to enjoy not only on this salad but to dip in other fresh veggies or even to marinade chicken on the grill!
Drizzle over the top or mix it all entirely in the whole thing, almost like you would a coleslaw. You can see how I did that in my video below.
Please see my recipe over on the Sweetleaf Website. Link is below the video.

Sweet Leaf Stevia user here! This salad is calling my name! Everything about it sounds deeeelicious! I just have question, which brand of unsweetened peanut butter do you use? Thank you in advance!
The 365 brand I believe it's from Whole Foods.
Loved your cole slaw recipe .
It helped me stay on my no-sugar eating .
Did I miss the "print" icon in that recipe?
Could you substitute a nut butter instead of peanut butter?
All the goodness of aspring roll in salad form? Perfect! Looks so delicious and like so much less work than assembling all the little rolls.
Exactly! I'm for quick in the summer!
This looks seriously fantastic. I love spring rolls and peanut dipping sauce, so I think I could eat this all day!
That sauce makes everything better!
The Peanut Dressing Nutrition Facts states 4.1g sugar ! What can I use to make it actually Sugar Free?
No that info is per serving for the entire salad plus the dressing mixed in. The dressing alone isn't where natural sugar is, it's in the veggies used. I used unsweetened peanut butter, but there is natural sugars in all veggies used.
Looks delish, but with 83g of carbs I don't think it qualifies as "low carb" Is there a misprint?
That's a misprint, I will let them know.
Should be 8.3
Yum! Trying to eat more greens, love the dressing!

I would love to have the quantities/proportion for the dressing.
I appreciate the work you do very much. But I'd be so grateful for the recipe.
Hope I am not missing it somewhere as I am scouring your site.
Maybe you didn't wait for the page to completely load, but it's in pretty big print under the video:RECIPE FOR SPRING ROLL SALAD WITH SWEET PEANUT DRESSING! Here's the link: http://sweetleaf.com/spring-roll-salad-with-sweet-sugar-free-peanut-dressing/
Actually, no the link isn't under the video for me either....I have had the same problem here more than once & I am pretty computer & internet savvy (at least that's what my IT guy tells me)...so I wait until you give it, or sometimes I can find it myself, but not always.
I couldn't see it either. Weird. Thanks!
The link is no good, it brings up an error page!
the full recipe is at the bottom of the page now.

I didn't notice it either. It's because the recipe should be just posted under there, since we're already on the recipe page. It just looks like a headline and isn't noticeable as a link. It's another click on the page to another page.
