Prepare the veggies ahead if you like or chop them up once you get home. That's really all the work needed for this recipe, the oven does the rest. Using lean turkey kielbasa that is already cooked is also why this recipe works so well for a weeknight meal. You can even replace any veggies with whatever veggies your family likes. Super adaptable and delicious!
Turkey Kielbasa Vegetable Bake

Ingredients
- 2 cups red purple, white small potatoes, cut into chunks
- 2 cups Brussels sprouts halved
- 1 cup sliced onion
- 1 cup sliced baby belle mushrooms
- 3 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon pepper
- 13 ounce package lean turkey kielbasa sliced
Instructions
- Preheat oven to 400 degrees.
- Spray the inside of 9 by 13 baking dish with nonstick cooking spray.
- Place all vegetables into a bowl and toss with oil, salt and pepper.
- Place all vegetables into baking dish.
- Cover and bake vegetables 50-60 minutes until potatoes are fork tender.
- Add sliced kielbasa to baking dish and continue to bake covered for another 10-15 minutes until kielbasa is heated through.
