Lentil & Barley Salad from Kalyn’s Kitchen: Recipe Review

 

 

Don’t you just love when you can out together a fabulous salad for lunch date with friends and YOU KNOW it will be delicious even though you’ve never made it before?

Well….maybe that’s just me 🙂 but when I saw this incredible salad from Kalyn’s Kitchen I just knew I had to try it and of course I made it for guests coming over just today in fact!

I couldn’t wait to share because it will surely be a salad I make again.

Warm, hearty, satisfying and MEATLESS!

 

 

All that is needed to be cooked is the barley and lentils which can be cooked in ONE pot (I love that!)

The recipe does say to add some cherry tomatoes, but unfortunately I was out of them and needed this for today. So guess what? Still. fantastic!

In place of those tomatoes I didn’t have, I added about 2 tablespoons of sun dried tomatoes, can you say YUM?!

If I had more time I probably would have made some Garlic Whole Wheat Pita Chips to go with it. Now that would have been perfect. Oh well, must make again soon!
