Overnight Banana Steel Cut oats is the crock pot rocks!
The crock pot or maybe you call it the slow cooker, whichever name you use, is by far the best invention ever created for a busy family don't you think?!
I've made Overnight Apple Oatmeal [using honey] and Sugar Free Crock Pot Oatmeal, but basically hadn't ventured into STEEL CUT OAT world.
Mostly because I know my family and the oldest, pickiest child as well as the youngest child who has some food texture issues since he was born, hates all things oatmeal except my Personal Sized Baked Oatmeal with Individual Toppings.
So when I attempted the overnight steel cut oats and gave some to my hubby, the oldest by my surprise asked for some, HA! I was shocked when he ate the entire bowl. Call it a miracle, but I have no idea the big difference really, but by GOLLY I shall make it again and I did. The first time it was dryer than I preferred so I increased the liquid and the recipe is perfect.
The banana is optional, but for me it adds a sweetness and I need very little sweetener. You can leave it out if you like without problem. Add whatever fruit and sweetener you like.
Mine looks even worse because I believe, no evidence though, that the hubby awoke before I did, started to stir, stopped, realized I may want a picture and recovered it! But the next pic shows , ALL is WELL anyway!

The banana can be eliminated if your allergic or simply don't like banana!

- 1 cup steel cut oats
- 3 cups water
- 1 tablespoon butter
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 1 banana, mashed
- nonstick cooking spray
- Spray the inside of your slow cooker then add all other ingredients, including mashed banana if using.
- Cook on low for 8 hours.
- It will look like a brown mess because of the cinnamon, don't worry! Mix well and add your favorite fruit on top if you like and sweeteners if you need it.

This recipe was delicious!! I ran out of steel cut, so I made it with old fashioned oats and it still came out great. I used a large crock pot so I put the ingredients into a Pyrex bowl, covered it with foil, and sat it in the crock pot in a water bath - fill the crock pot with water up to the level of the ingredients inside the bowl. Perfect solution for large crock pot if you don't want to double the recipe.

Hi...Just found this and trying to make mine as low cal/low carb etc as I can. Trying to figure out how the protein content came about. I'm using bulk organic steel cut oats (1 cup), Shed Spread w/calcium butter, Dole mini banana, banana extract, cinnamon, water & salt in the quantities you listed (except for the mini banana). Perhaps its the oats??
Going to dig out my smallest crock pot and eager to try in the A.M. So serving size is 1/4 measuring cup and I should get 4 servings, correct? Hope this works as I'd love to try a version with PB2 and unsweetened cocoa powder.

What are steel cut oats, please? Haven't seen these labeled such in Australia. Is it just oats that aren't the quick cooking ones, so they're bigger & thicker?

Okay confused can i or do i add apples, bananas, and berries to the crockpot all together to cook? does it freeze well?

I added the bananas and in my other recipe the apples prior to cooking, yes all together. I've never frozen it so I can't say.

Yes I freeze it, I did it with the pumpkin recipe I am going to make banana this morning. Pumpkin I used milk in mine instead of water, you can use almond milk as well. I also am going to do apple juice/cider in the apple one, maybe juice and water so its not too sweet next time I make the apple recipe. I freeze them in large muffin pans (spay with pam first) then put hot water in sink dip bottom of muffin tin in water to loosen oatmeal from pan. Then pop into zip lock bags in freezer, easy breakfast.

I was just looking at your apple slow cooker oatmeal and was wondering why you use water in this recipe and milk in the other...I have both types of oats and was just curious as to which one might be more child approved lol

Not much difference in taste. The kids like either, just a little less creamy I would say. I think I might have been put of milk at the time and tried it with water so since it was still good that's how I posted it, LOL! Less calories as well using water but either way is fine.

What size crock pot did you use? If it is larger than a 4 quart you should double or triple the recipe.
