These Slow Cooker Low Carb Keto Beef Short Ribs make the most satisfying and delicious meal, served over mashed cauliflower and it’s comfort in a dish!
Succulent tender meat that simply falls apart when you touch it gently with a fork will make anyone swoon with excitement knowing what’s next. And That first bite does not disappoint. It’s everything you hoped it would be and more.
This recipe is your fool proof way to get the most tender short ribs you’ve ever had! My family can’t get enough of these ribs, even my picky daughter who doesn’t like beef enjoys this because of how tender it is.
Seared to perfection then a few simple ingredients you probably have in your kitchen already, all placed in the slow cooker to do it’s thing for a few hours. Add some mashed cauliflower or riced cauliflower for the bed and dinner is served. Truly a comfort dish in any season but especially wonderful on a cold winter’s night!
I’ve only made this recipe using boneless short ribs but you can use bone-in if that’s all you can find. I’m sure either will work, they just need plenty of time to get tender.
Also it’s totally optional to add some carrots if your spouse is not into a low carb lifestyle, like mine is not. Just throw them in when cooking the onion and remaining ingredients.
Brenda’s Notes:
- You could probably make this in your Instant Pot as well but I’m not sure if you could fit the 4 pounds as I have in the recipe. I would think it would need at least 1 hour if not more to get the tenderest meat desired.
- You could also make this in your oven. Follow my directions but start with a Dutch Oven to sear the meat. Once all the meat is seared set aside and add remaining ingredients. Once onion is tender add back the meat and place it covered in your oven at 350 degrees F for 2-3 hours. Check it half way through as you may need to add an additional cup of beef broth.

Slow Cooker Low Carb Beef Short Ribs
Ingredients
- 4 lbs boneless or bone in, beef short ribs cut crosswise into 2 inch pieces
- salt
- pepper
- 2 tbsp olive oil
- 1 cup beef broth
- 1.5 cup onion chopped
- 3 cloves garlic minced
- 2 tbsp Worcestershire sauce homemade
- 2 tbsp tomato paste
- 1.5 cup red wine
Optional: celery, carrots
Instructions

Heat the oil in a large skillet over medium high heat. Season one side of your short ribs generously with salt and pepper.

Place half of the ribs, seasoned side down onto the hot skillet and brown. Season the top of the ribs in the skillet with salt and pepper. Flip once the bottom is browned. Remove and set aside while browning the rest fo the meat.

Add beef broth to slow cooker and place short ribs into crock pot.

To the same skillet add your remaining ingredients and bring to a boil. Cook for 5 minutes or until onion is tender. Pour this over the ribs in the crock pot.

Cover and cook on high 4-6 hours or low 8-10 hours.
This recipe sounds delicious, but I have searched high and low for boneless short ribs and cannot find them anywhere in my area. Can you suggest any places where I can find the boneless short ribs?
Check with your butcher at your local market. Bone in is perfectly fine to use in this recipe though.

Well I think you’re right. I thought I had found one I used that didn’t contain sugar or soy but I was wrong. Guess I will need to make my own version homemade, but for now I will link to one to use.

I don’t have red wine. What should I use instead?
You’ll need some kind of cooking wine to replace. Marsala would work.
Try to buy regular wine you drink (even if you don’t drink) because the ‘cooking’ wines have lots off additives in them. The real stuff is so much better for flavor in cooking. It mellows out.
Where do you find the Red Wine? What brand? I’m new to this.
Any brand of red wine you like at your local store.
I don’t like/drink wine so I never buy it. Is there something else that would add a similar enough flavor?

I made this for dinner tonight and it was delicious! I could not find beef short ribs locally, so I used country ribs instead. Still turned out amazing and the beef was very tender. I used a cheap Cabernet for the sauce which was very tasty after cooking all afternoon. Definitely adding this one to my recipe book! Thank you!

Made a special trip to the store this morning for wine… well worth the trip! It smells divine. The carbs in 2 TBSP worschestire sauce is a very small amount .. negligable .. so no issues. Can’t wait til tonight.

Thickens the sauce a bit as well as a more richer flavor.
I find beetroot a satisfactory substitute for tomatoes. They have the same “umami” . Cook/boil the beets and mash them.

Do we fully cook the short ribs BEFORE we put them in the Crockpot, or are we just getting a nice little sear on it? If we’re fulling cooking them, do they not get dry after fully cooking and then 4-6 or 8-10 hours in the Crockpot?
You’re just searing them, they will cook in the slow cooker.
Tried it last night. Came out more like soup, not much flavor. Will have to thicken it with cornstarch or something.
I feel like a dummy here, but aren’t cross-cut short ribs completely different than the ones shown in the video above? I always thought that cross-cut would be the Korean style, and that the short ribs shown in the video are, well, just regular short ribs. I bought $20 worth of cross-cut short ribs, which look nothing like the ones in the video, but hopefully they’ll still turn out okay.
Sorry that,”cut crosswise” confused you in the ingredient list. My husband gets us a huge long slab of ribs and separates them along the bone, cutting them crosswise into 2 inch pieces, the meat is sitting on top of the bone. The cross- cut ribs, the Korean style you’re referring to or flanked style, is cut across several bones. The ones in my pictures and video are not cross-cut ribs, they are regular ribs, cut crosswise.But cross cut ribs can be braised and slow cooked as well.
My son is doing Keto and I wanted to make this for him, but my concern is the wine. Isn’t wine high in sugar? I don’t know anything about this Keto life, so I wanted to ask you before I go out and get all the ingredients. Thank you in advance.
Wine can be on a keto diet and for this recipe the alcohol burns off, it’s simply for flavor.
Making today without wine but doubled up grass fed bone broth. Our ribs are also grass fed and supplemented with some stewing lamb. House smells fantastic 5 hours in on slow cook. Can’t wait mmm ?.
I found this recipe back in November shortly after I first started keto and I have made this MANY times and every time has been amazing! I have used stewing beef, side ribs, and short ribs. It works with any type of beef in my opinion. I have not added anything with the exception of some red pepper flakes one time to spice it up a bit.
Any red wine works. (I do drink wine and I always use whatever I happen to have on hand at the time.
Also, wine IS keto! Thank goodness! Specifically dry red or white wine as they have less sugars. It’s not 0 carb, but it is low carb.

How many ribs for 5 oz? Also, if your using pork chops won’t they dry out? I don’t like thick chops
The weight depends on the size of your beef ribs. Once they come out of the slow cooker, mine fall right off the bone then I weigh the meat. I am not using pork chops in this recipe this is for beef short ribs.
I have made this several times and is always a hit !! I use Bogel merlot which is cheap but good flavor. Keri or no Keto this recipe is a hit. Key is make sure you get a good sear before putting in crock pot and enjoy the smell for 8 hours !!! Love it !!
