I've got a bunch of low carb English Muffins but my favorite is now this new keto cottage cheese English muffin recipe with banana flavor and nuts!
The basic steps are exactly the same as the other 90 second English Muffins, with simple ingredients and with the most delicious texture of traditional English muffins!
I'm sure you're wondering if I used real banana right? For the keto English muffin version I used banana extract to keep the total carbs and net carbs lower.
For those who are on a low carb diet, I adapted the recipe just a little and used some real banana and no extract. It does increase the total carbs and net carbs but no sweetener is needed.

Cottage cheese is the new cauliflower and I've hopped on board to bring you amazing high protein low carb keto bread recipes using it!
If you're on a keto diet, always check the ingredients on tiktok- make the ones that don't include regular refined flours and sugar because there are many creators who are using cottage cheese for high protein recipes but most often they aren't for a low carb diet or keto lifestyle.
It all started when I adapted my Cloud Bread Loaf to make it with cottage cheese and I was hooked!
Next came the cottage cheese cinnamon swirl bread and then the garlic herb cottage cheese bread. I've also made a 90 second Keto Cottage Cheese Cinnamon Raisin English Muffin and a 90 second Cottage Cheese Pumpkin English Muffin.
90 second Keto Cottage Cheese Banana Nut Bread
90 second Low Carb Keto Banana Nut English Muffin
Ingredients
- 2 tablespoon cottage cheese
- 2 tablespoon almond flour or sunflower seed meal for nut free
- 2 tablespoon no sugar added peanut butter powder or replace with mashed banana
- 1 large egg room temperature
- 1 teaspoon banana extract remove if using real banana
- 1 teaspoon monk fruit allulose brown sugar substitute remove if using real banana
- ½ teaspoon baking powder
- pinch of salt optional
- 1 tablespoon walnuts chopped
Instructions
Microwave Directions
- Grease two ramekins or microwave-safe bowls or an oven-safe ramekin with olive oil, avocado oil or coconut oil cooking spray. Set aside.
- Place the ingredients together, except walnuts, in a small bowl and stir together until combined. Sprinkle half the nuts on top of each muffin.
- Place one dish into the microwave, cooking time may vary depending on the wattage of your microwave, but start with cooking for 1 minute. Check with a toothpick in center. If it comes out clean it's done, if not, cook another 30 seconds. Repeat with second dish.
- Allow to cool enough to slice in half and toast.
- Enjoy with a little butter or sugar free strawberry jam and cream cheese.
- Store in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
Oven Directions
- Grease 2 oven-safe ramekin. Pour batter evenly into greased ramekin. Bake in a preheated 350 degrees F oven for 7-8 minutes. If using real banana it may need to bake a little bit longer, 10-12 minutes.

I just made this today! Totally delicious and I’m so pleased to have found a nice little dessert for myself. I added the mashed banana as in the recipe and one teaspoon of chicory root for added sweetness.
As a dessert I didn’t toast it but poured fresh cream over the top. It can be had with yoghurt or fresh fruit. Yummy!
