What is Halloumi?
Halloumi cheese is a fantastic alternative for those who have sensitivities to cow's milk. Halloumi cheese is traditionally made form sheep's milk but can also be made from goats milk. It's a mild, semi-hard cheese that has a high melting point. You can actually fry or grill it so it gets crispy on the outside and is semi soft on the inside. My daughter has some lactose issues with cows milk but has no problem enjoying halloumi cheese as well as Manchego cheese which is also made from sheep's milk.

Fresh herbs and lemon zest add that tasty Mediterranean flavor to these easy zucchini balls. They can even be prepped in advance and saved in the fridge until you’re ready to cook them off at the last minute. Wonderful for an appetizer or side with a tasty dip. Keto Halloumi Zucchini Balls
Keto Halloumi Zucchini Balls
- 2 medium zucchini
- 1 shallot chopped finely
- 2 cloves garlic minced
- 4 ounces halloumi cheese cut into pea sized chunks
- 1 egg
- 3 tablespoon fresh basil finely chopped
- 1 tablespoon fresh parsley finely chopped
- 2 teaspoon lemon zest
- 4 tablespoon ground flaxseed
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- oil for frying
- Grate the zucchini and place in a colander to drain for 10 minutes.
- Place into a clean cloth and squeeze until almost dry.
- Place in a large mixing bowl and add all of the other ingredients, except for the oil, and
mix really well.
- Roll into balls and place n a plate or tray and refrigerate for 30 minutes to 1 hour.
- Heat a few tablespoons of oil in a frying pan and shallow fry the balls in batches until golden.
- Store in the refrigerator for up to 5 days.
