Because this is not a cookie dough for baking, it's an easy cookie dough made without eggs, so it's perfectly edible as is. Keto Cookie Dough Fudge
- 1 cup cashew butter unsweetened
- ¼ cup coconut oil melted
- ¼ cup Swerve granular sweetener
- 2 tablespoon coconut flour
- 1 tablespoon vanilla extract
- ¼ teaspoon salt
- ¼ cup sugar free chocolate chips plus 2 tablespoon more for topping
- Line an 8x8 baking dish with parchment paper.
- In a medium bowl combine the cashew butter, coconut oil, erythritol, coconut flour, vanilla, and salt.
- Fold in the ¼ cup chocolate chips. Press the dough into the baking dish and top with remaining chocolate chips.
- Freeze until firm, about 45 minutes.
- Slice the fudge into 16 squares.
- Store in a freezer safe container for up to 2 months. Or refrigerate for one week.

Can I use almond flour instead of coconut flour?
They can't be equally swapped. You may need to double or triple the amount I used to get these to hold together well.
This is so good! I have made it twice. The first time I was out of coconut oil (how did that happen!?) so I used coconut butter and it turned out great. The second time I had the oil and it is delicious too! I put the second batch into silicon molds instead of in the lined pan.

Olive oil is the next best alternative to Coconut oil, when it comes to Ketosis!
Just wondering if a person has a coconut allergy what could be substituted for the coconut oil?
You might want to try melting cocoa butter or ghee. The olive oil taste might come through too strongly
How many grams for one cup of nuts butter? I'm French and it's now always easy to understand the receipes!
