No Bake Keto Raspberry Cheesecake Mousse is made with only 5 ingredients, is low carb and has no sugar added!
Raspberry Mousse
What’s not to love when a beautiful dessert can be made in minutes that’s also healthy too! When I think of desserts for a holiday, I’m really not into slaving away in the kitchen. For example, Mother’s Day is about less work and more relaxing. I’d prefer a simple, beautiful treat that requires little work, but still feels luxurious and satisfying. This recipe is a simple adaption of some of my other favorite no bake treats, Mint Chocolate Cheesecake Mousse and Pumpkin Cheesecake Mousse. Simple, easy, little effort involved and healthy to boot!
You could really change out the raspberries to any fruit of choice, but one thing remains is adding my favorite liquid stevia to the blend. This time being this recipe involves berries, I chose berry flavored stevia. Of course if you only have vanilla or plain clear you can certainly use that as well. Powdered stevia would work too, but it wouldn’t be my first choice. The liquid mixes in better and no aftertaste is evident. I’ve been noticing when I have a no bake recipe the liquid stevia is always my first choice. When baking the powdered stevia is fine, but with no bake recipes such as this, flavored stevia’s only enhance the recipe all the more. Swerve confectioners sweetener is also a fantastic option if you don’t like stevia.
I’m a cheesecake lover for sure, but I’ve never been fond of the crust, hence this mousse version was created. You could easily make a cookie crumble to add to the bottom of the glasses if you desire. You could use this crust from my Raspberry Streusel bars.
Top with fresh berries and it’s just perfect for a Mother’s Day treat or for any occasion! Guests will have no idea it’s made without sugar and won’t care for that matter. It’s so satisfying because of the healthy fat, just a small amount is all you need to feel content.
Creamy and thick, just the way I like it! And with just 5 ingredients needed and very little time in the kitchen to prepare it, it’s a winning recipe for everyone. If you’re not into raspberries and would like to use another berry, I’d suggest, blackberries, blueberries or even strawberries. You could even add this mousse to a popsicle mold and have delicious creamy cheesecake popsicles!
I can’t think of a better way to enjoy a special holiday or birthday or any day for that matter, when you have a delicious dessert that won’t cause you a sugar crash and won’t break your caloric budget for the day either! I figured since it is so rich and creamy, 1/2 cup is plenty for a serving, therefore there are 6 servings in this recipe.

No Bake Raspberry Cheesecake Mousse
Ingredients
- 8 oz cream cheese softened
- 1 tsp Berry liquid stevia or 1/2 cup Swerve confectioners
- 1 cup raspberries fresh or frozen, thawed, and drained
- 1 cup heavy cream
- 1 tsp vanilla extract
Instructions

In a stand mixer, cream the cream cheese until smooth in texture. Add the raspberries and blend until combined. Pour heavy cream into cream cheese and raspberries and blend on high until it becomes whipped in texture. Once whipped, add the vanilla extract and Berry liquid stevia and blend again. Makes 3 cups total.

I haven’t got raspberries or liquid stevia…not really a stevia fan. What do you think about using fresh strawberries and splenda? THanks!
You can really sweeten this however you like, just add a small amount then taste and adjust as needed. I don’t use Splenda because it is artificial but yes you could use it.

Been using the vanilla stevia in un-sweetened yogurt, Crumble a little graham cracker on it for texture and YUM. can’t wait to get some berry flavor stevia and try this, problem would be eating only one serving. 🙂

Can I use the smaller stand mixer or just use the blender and do it by hand?
Tried making this for a family reunion and it really turned out gross. I doubled the cream cheese as one recipe wouldn’t be enough. After I’d blended the raspberries it was so runny it was like a syrup. I hadn’t even added the cream, I didn’t double the cream as I knew it would be like soup then. Added the liquid Stevia and it gave it such a bitter taste. Not sweet at all. I let it set over night in the fridge and took it out to see if it had thickened up and it hadn’t. Total waste of my money for the ingredients. Do all sweet Keto made items taste bitter when you add the stevia vs regular sugar? Glad I didn’t embarrass myself by taking this. Will do my regular chocolate chip bars.
Sorry you had trouble with the recipe. Sounds like the problem started with your cream cheese. Softened cream cheese only needs about an hour on the counter. Did you soften in in the microwave?
No, I didn’t soften in the microwave, just sat it on the counter for about a half hour and then began making it. Was it to have a sweet taste, because it really didn’t and oh so runny. Not good at all.

Great recipe! However I made a few changes based on how I make whipped cream and my dislike of stevia. When whipping cream, I always stabilize 1C cream with 1t plain gelatin. For this recipe, I used sugar free raspberry Jello and made that first. Then combined the whipped cream cheese, swerve, raspberries and then the whipped cream… Beautiful and tasty!
