You could skip this step like I did, if you prefer and just add the heavy cream to the mixer to blend together.

Instructions

  • Place the first six ingredients into a food processor and process until fine crumbs form. Separate in half.
  • Using half the cookie crumb mixture, place about 2 teaspoons of cookie crumbs into each cupcake liner and press down to flatten evenly. Set aside.
  • Place the cream cheese into a stand mixer and blend on high until smooth. Pour in the heavy cream and sweetener and blend until smooth and whipped in texture. Alternatively, you could whip the heavy cream separately and fold it into the cream cheese.
    Taste and adjust sweetener if needed.
  • Stir the cookie crumbs into the cream cheese mixture and fill the 12 capacity muffin pan.
    If using mini oreos, push half way into the center of each cheesecake cupcake or top with sugar free whipped cream and serve.
    Refrigerate until ready to serve. Store refrigerated for up to 3 days.
