Fathead Rolls
Comfort food has always been something related to bread, don’t you think? A crusty Italian loaf smothered in butter, croutons for a salad, rolls with dinner, french toast, bread pudding and on and on and on. The staple of an American diet has been bread.
But once you decide to be on a low carb diet, standard bread is out of the question which could make anyone feel the loss of that once beloved food. No worries though, I’ve created a ton of low carb bread recipes to make you feel like you’re not missing out on anything!
Keto Cinnamon Rolls
When I shared my Keto Cinnamon Rolls, they went viral immediately! The texture is pretty outstanding and I can’t use the typical almond flour like most low carb bloggers because my youngest son has a tree nut allergy. So coconut flour and sesame flour are the choice of low carb alternatives I’ve been working with and perfecting. Today’s recipe is an adaption on a savory take to my cinnamon rolls. And they are just as good as they look. They will completely fulfill that bread craving and that pizza craving!
Honestly whether you’re on a low carb diet plan or not, these are the pizza rolls you’ll want to make again and again. Super easy, no yeast involved, no fancy ingredients, just simple and that’s how I roll. Pun intended!
Fill them with whatever you like on or in your pizza! Other additions would be olives, onions, sausage, etc. My family devoured these the first time I made them. You can also top them with more Marinara Sauce if you like a bit more sauce.
Brenda’s Notes:
- So when I made these for the video I used coconut flour, but then I ran out of my beloved coconut flour. I only had about a 1/4 cup the second time I made these for the photos. I decided to see how sesame flour would work as a replacement. And they were just as perfect! So use either sesame flour or coconut flour as my orginial recipe calls for and you will end up with the most delicious roll you’ve ever had!

Keto Fathead Low Carb Pizza Rolls
Ingredients
Dough
- 2 cups mozzarella cheese shredded
- 3 ounces cream cheese
- 3/4 cup coconut flour
- 1/2 tsp italian seasonings
- 1/4 tsp onion powder
- 1/2 tsp garlic salt
- 1/2 tsp xanthan gum
- 1 tbsp baking powder
- 2 eggs
Filling
- 1/2 cup marinara sauce my recipe or Rao's brand
- 8 ounces mozzarella cheese sliced or shredded
- 2 ounces pepperoni slices
Instructions

For the dough, melt the 2 cups shredded mozzarella with the cream cheese on the stove top until combined well or in the microwave for 2 minutes.

Stir in the remaining dough ingredients. Wet your hands and mix together as best you can to form a dough.

Roll between two pieces of parchment paper to the size of 8 by 16 inches.

Preheat the oven to 400 degrees F.

Spread half the sauce over the dough. Lay the sliced mozzarella over the sauce. Spread out the slices of pepperoni.

Roll up and cut roll in half. Then slice 12 pieces.

Lightly spray an 8 inch pie dish with olive oil cooking spray and place the rolls in the pan. Top with remaining sauce.

Bake for 25-30 minutes or until browned on the edges.

Allow to cool for about 10 minutes or you won't be able to pick them up as they will be too cheesy.

I’ve not tried another sub for that but maybe beef gelatin powder.
Could you use substitute with almond flour
I honestly don’t think almond flour would be a good swap for the coconut flour. You’d have to change out the rest of the wet ingredients because they just aren’t equal. Might be better to find a fathead dough specifically made with almond flour.
Almond flour does not work well. I tried it and could not get it to roll up. Ended up just making a stuffed pizza! LOL

Can it be frozen after baking?
We devoured them so I’ve not frozen them but I think I would not bake them if I were going to freeze them. Once frozen then thaw overnight and then bake.
I forgot to add the eggs – I will let you know how they taste!!
Oh my goodness I am so trying these this weekend! I’m trying to go grain free, so the possibility of pizza is magical! The baking powder’s a small issue because of the corn starch – but I’ll bake them following your recipe and then experiment with baking soda later :o)

Yes absolutely. When I made my Keto Fathead Rolls I had started with 1 tsp and one day making them again for dinner for my family I accidentally dropped in 1 tbsp of baking powder. Best thing to ever have happened because those rolls were the fluffiest dinner rolls ever. So I used that much in my Keto Cinnamon Rolls and for this recipe.
Ok, I made it last night with 1 tbs. Sooooooo good!

Is it 4 net carbs per slice (12 slices in a roll) or 4 net carbs per whole roll before slicing into 12?
So if you saw the video I rolled the entire dough, adding the sauce, cheese and pepperoni, then sliced them into 12 pieces. The net carbs are for 1 piece or 1 roll after being sliced.

I just scroll down 🙂 Sometimes I read about your life, sometimes not. Thank you for the recipe. I tried it last night and it came out about like the homemade pizza I used to make before low carb, which is to say “OK” (which is a lot better than many other low carb pizza recipes!). The texture came out soft enough that I think I would like the dough in cinnamon rolls, and I’ll give that a try.

Have you ever prepared with daiya, cheese alternatives. I am dairy intolerant and these do look fabulously yummy.
Ooh! I would be interested in this, too. I have a problem with a lot of soft cheeses, but so many recipes call for cream cheese! Let us all know if you go ahead and try it out, please. 🙂

Is the amount of coconut flour correct? This dough was seriously dry and hard to roll out. I ended up wasting dough because I gave up on rolling it. I am not sure if it was too much coconut flour or if some brands vary. But this was certainly not as easy as the video appeared to make it.

Maybe try more garlic or onion powder seasoning or maybe reduce the coconut flour by 1/4 cup and try some grated parmesan, though this is not something I tried so not sure how it will work.

Sorry I’ve not tried another shredded cheese besides mozzarella so can’t say whether you’d get the same texture.
Could you please specify the amount of “remaining” sauce to spread over the rolls? Ingredients show 1/2 cup but instructions call for the entire half cup to be spread onto the dough.

Thanks for catching that. I meant to say spread half the sauce onto the dough then roll them up. Use the remaining sauce to top.
Help! My dough tasted fabulous but I could not get it to roll without it breaking apart. I had to try to piece it all together and just make a very messy (but tastes) pizza. Any ideas?
These are pretty easy to make, and taste great, but unfortunately using so much coconut flour resulted in a laxative effect. Neither of us have particularly sensitive stomachs, but this certainly did a number on us. I’m sure I’ll be making these again, but with an almond flour fathead dough.
I’ve never heard of coconut flour causing a laxative effect. Perhaps you have a sensitive to using cheese or dairy products.
Hi—I tried these tonight for supper and they were really good! One thing for sure…they are super-filling! I could only eat 1 1/2 roll before I had to pack it in. Next time I will add in additional veggies before I roll them up. As reported by others, the dough is a bit dry but when I wet my hands with water to aid rolling, it helped immensely. Next time I just might add a bit more sauce.
And since I had an open pack of Boursin herb and garlic cream cheese in the fridge, I subbed that in for the plain cream cheese and it was delicious!!

Saw these on your Instagram account and had to try them. The only thing I did different was use less cocounut flour and add extra seasoning. Think I used 1/2 cup vs 3/4 because I know coconut flour is super absorbent. They were fantastic and rolled out great. I can’t wait to try the cinnamon rolls! Thank you for sharing ?

Is there only 2 eggs to 3/4 cup of coconut flour? Does coconut flour need more moisture? I followed the recipe and dough was just so dry and hard to roll out. .

A few people asked this same question but I didn’t see any reply. I made the recipe exactly as written but I had a difficult time rolling up the dough. It was breaking apart. What can be done to prevent this from happening? Thanks in advance 🙂

Anything that I could substitute the cream cheese for? I can handle a little bit of cheese, but the cream cheese will put me over the top….
I tried this recently and they were tasty and we were pleased with the dough. But having them together in the cake pan, the middles didn’t cook all the way through even with extra cook time. Anyone else have this issue?
So, I made these tonight and yes, I forgot the eggs and I used almond flour as I dint have coconut flour on hand. I actually added a little extra moth & part cheese on top of the rolls. I cooked them for 25 minutes and I thought along with my husband that they turned out DELICIOUS! I would maybe add some more seasoning but otherwise I wouldn’t change any of the things I did.
I meant Mozzarella and Parm cheese on top, darn typo’s.

Great concept but unfortunately this recipe wasn’t great for us. You can really taste the coconut and it takes allot longer to cook, even with an extra 15min the inside was still unpleasant to eat.
I highly recommend a normal fathead dough if you can have almond flour. That is always more like dough and you don’t even notice your not eating normal bread.
I made this twice and both time weren’t enjoyable 🙁
