EASY STRAWBERRY CHEESECAKE DIP
The warmer months are here and that means outdoor cook outs and barbecues. Less time in the kitchen making desserts is more appealing when you want to enjoy the short season of summer, hence the appeal for no bake keto desserts, which are the best!
When you're on a special diet like being sugar free, low carb, or keto, it's always nice to bring a dessert that you too can enjoy to parties, but also share with others who may not be low carb. This easy dessert pleases them all and everyone will be asking you for the recipe!
CAN I SWAP KETO SWEETENERS USED?
This is perfect for a holiday with family and friends. Make ahead and just keep it in the fridge until you're ready to serve. It's creamy and naturally sweet with the strawberries. Adding just a small amount of berry flavored stevia helps bring it all together. Of course feel free to use whatever sweetener you prefer, just use a small amount then taste and adjust as needed.
One of our newer favorite low carb sweeteners that doesn't leave an aftertaste, is Better than Sugar by Sweetleaf. They have a confectioners powdered sweetener which would be best for this recipe and they also have a granulated option. It's a combination of erythritol and stevia and has plenty of sweetness as sugar would provide.
Swerve confectioners sweetener is also low carb, but doesn't have as much sweetness and you may need to use a bit more to get this as sweet as you like. Allulose would be another option, but again it isn't as sweet as using the Better than Sugar sweetener. Allulose comes in a liquid, and granulated form.

CAN I SWAP THE STRAWBERRIES?
Add as many or as little strawberries as you like. Nutritional information is based on using just 1 cup. If you're strawberries are all ready pretty sweet, skip any sweetener at all. Not a fan of strawberries? Try it with raspberries, blueberries or blackberries!

WHEN DO I USE FOR DIPPING?
Honestly you could just eat this with a spoon but of course, that could lead to overindulging! Here are some options for serving this dip with family and friends. If you are just not in the mood to turn that oven on, try one of these prepackaged cookies for dipping below!
Highkey cookies which come in a variety of different flavors, all keto and gluten free! Kiss my Keto cookies also has a variety of different flavors, but the one I think that would be best for this dip is the vanilla butter! Fat Snax cookies are another great brand of keto cookies and the lemony lemon cookie would be awesome with this dip!
Unfortunately all these keto cookie brands mentioned are made with almond flour so if you have someone with a nut allergy in the family, then don't buy them, just make my nut free cookies instead. My Keto Vanilla Wafers would be the perfect option or even my Keto Nut Free Chocolate Chip Cookies. My kids could not get enough of this luscious, creamy dip. In fact they even liked it better than my Cookies & Cream Dip, I was shocked!

LOW CARB STRAWBERRY CHEESECAKE DIP
Low Carb Strawberry Cheesecake Dip
- 16 ounces cream cheese room temperature
- 1 cup heavy cream
- 1 cup strawberries fresh, stems removed, diced
- 1 teaspoon berry flavored stevia or Use my Sweetener Conversion Chart
- pinch salt
- Place the cream cheese in a stand mixer and blend on high until smooth. Scrape down sides and add pour in the heavy cream.
- Blend on high speed until incorporated well.
- Add in half the strawberries and blend on low speed just to mix the strawberries throughout.
- Add the stevia and salt, blend then taste and adjust sweetness if needed.
- Pour into a serving bowl. Top with remaining diced strawberries.
- Keep refrigerated until ready to serve.
- Serve with my keto vanilla wafers or keto chocolate chip cookies!
I didn’t think it was very sweet and mine was on the runny side. I was disappointed, but served it anyways after doctoring it up with jello.
Sounds like you didn't taste it after adding the strawberries. Since there isn't anything to make you sick, tasting it before letting it set in fridge is always recommended then you can decide if it's sweet enough for you. Also if it was runny, that was probably from not whipping the cream enough after adding the fresh strawberries. More heavy cream could also have been whipped in to thicken it.

Make sure you use good cream cheese, not store brand. And oh, the salt, too much. I don't think the recipe needs it. Mine was too salty. I need to sweeten it up!
How long does this last in the fridge and can it be frozen?
I've never frozen it, but it will be good in the fridge for at least 5 days.

Are we supposed to beat the cream cheese and the heavy whipping cream until it turns into a whip cream texture because mine was very runny. I’m hoping that it thickens up in the refrigerator overnight.
Just as mentioned in the directions, yes all together. It will thicken in the fridge.
what is the serving size amount 1/2c or 1 cup, 1/4cup.. i know portions make all the difference when you are adding this into macros
I know this is an old recipe, but I was just looking more closely at it and am wondering if the stevia is liquid or powdered? It makes a difference. Also, I always buy my cream cheese in the 8 oz size, but recipes usually specify. Is it 8 or 4 oz?
It's 8 ounce package and it's liquid stevia, I believe the stevia is linked to the berry flavored I used.
This dip is every bit of deliciousness described. Easy to make easy to eat.
Alternatively, make the dip without the strawberries... and just use plain stevia (Trader Joe's has a great pure Stevia powder) if you can't find, or don't want to purchase berry flavored... then dip the strawberries.. Perfect summer dessert!

Hi, this looks delicious, but do you think a bit of sugar-free koolaid mix combined with water ahead of time would work in place of berry flavored stevia? I'd hate to buy a bottle of it and never use it up. I find that it's expensive. Thanks!

I was thinking about making some of the cinnamon pork rinds (butter, cinnamon, sweetner melted; toss plain pork rinds in it and chill in fridge) to dip with.

I was wondering the same thing. I occasionally turn low carb tortillas into chips by brushing them with coconut or olive oil and cutting into wedges or crack shapes, then baking for a bit until golden on both sides, but I know some people don't like to eat those. The ones I use most often (Mission brand flour tortillas) have a hint of sweet flavor to them on their own, but you could also make them a little sweeter by sprinkling them with a bit of cinnamon/sweeterner mix.
