Peanut Butter Flax Single Serving Muffin is the answer to a busy person's dream for a healthy breakfast in minutes!
If you are looking for a filling, quick, fiber filled, full of protein, but low carb, no sugar added breakfast that will keep you full till lunch, this is the muffin for you! Made with ground flax, powdered peanut butter, coconut flour and an egg as well makes an amazing breakfast that will not leave you hunger within an hour.
Although it's not the most attractive muffin, it sure packs a healthy punch! Often times as a mother we make everyone a good breakfast before they head out the door and forget ourselves. Or we eat the left overs on their plate. Or we choose a breakfast that might be quick and convenient but does nothing as far as keeping us full or satisfied. I'm always on a mission trying to find a quick breakfast for myself that can be made while I'm busy with my kids and can eat with them before we start our day.
This little muffin has been an experiment of mine for weeks now. It's been made with different amounts and different ways about 5 or 6 times until finally a moist, filling, single serving muffin has been accomplished.
Like I said, it's not the most attractive muffin at all so topping it with some powdered peanut butter over the top makes it much more attractive, don't you think? The powdered peanut butter I like to use is called JUST GREAT STUFF and it contains coconut sugar, unlike PB2 which has refined sugar in it. You can certainly use regular peanut butter within the muffin but just know it will change and increase the nutrition information. I wanted a smooth drippy topping so I used more water than suggested to get that drippiness over the top. I found the brand at Whole Foods and find it does not cause me to crave and prevents me from eating more as I would have to "make" more of it. I made a video all about here.
YUM right? Doesn't that look better! Of course you can eliminate the topping altogether and just grab and go and take the muffin with you. BUT eating it with a gooey peanut buttery topping is my favorite way thus far.
If you'd rather have a nice and neat look and topping to your muffin, mix some powdered peanut butter with some coconut butter and water and you've got a frosting type texture to top the muffin with.
Either way you choose to enjoy this muffin, you won't be disappointed!
I use the powdered peanut butter by the brand Just Great Stuff which contains only a small amount of coconut sugar which I mention above.
Peanut Butter Flax Single Serving Muffin
- Whisk all ingredients together.
- Spray a 7 ounce ramekin with nonstick cooking spray.
- Microwave for 2 minutes or bake at 350 degrees for 25 minutes or until a toothpick in center comes out clean.
- Enjoy immediately!
