Chicken Salad Cucumber Bites

Do you LOVE super easy appetizers that look really pretty and you made little effort?

I do! These are seriously easy….seriously low in calories…..seriously fantastic looking for a party!

These pretty little bites were a creation of food I had on hand and needed something to bring to a mom’s night “in” with friends. I wanted a carb-free snack I could munch on and not worry about consuming too many calories! This was PERFECT!

Only 20 calories for one yummy appetizer!! You can have quite a few and not worry if you can’t remember how many you ate while you (had a glass of wine) were chatting away with friends!

Tasty, easy, healthy and very delicious!

Extra Tips:

  • I cut the cucumber ends off, then sliced it in half, then lengthwise. I wanted them to resemble little crackers or tiny sandwiches. You can easily just slice the cucumber and use rounds.
  • Cucumbers vary in size but I was able to make 24 “sandwich” bites. That was 48 sliced pieces.
  • I used chicken I had in the freezer from my freezer cooking burrito recipe and it was seriously delicious! Use whatever cooked chicken you have on hand.
  • I shredded the chicken because you can use a lot less mayo rather than just using chopped chicken. It may seem dry at first, but work with it and it will absorb well and be just as tasty even though it doesn’t have tons of mayo.

This recipe is being shared at Women Living Well, Tasty Tuesday, Slightly Indulgent Tuesday, Gluten Freely Frugal, Feasting in Fellowship, Tidy Mom, Amee’s Savory Dish.

If you are interested in just making the chicken salad alone for sandwiches or wraps. here’s the breakdown for you.

  • Separating this recipe into 4 servings of abut 1/2 cup each and excluding the cucumber will give this for nutrition info:

  • 7 ounces cooked chicken breast, shredded
  • 2 tablespoons mayonnaise, light
  • 2 tablespoons fresh cilantro, chopped

Directions

  1.  Slice the cucumber making either 48 rounds or squares.
  2. Shred your chicken with a food processor if you have one or using a fork.
  3. In a bowl thoroughly mix the chicken, mayo, cilantro, scallions and cumin and salt and pepper.
  4. Lay a slice of cucumber on the plate you will serve the appetizer on. Add a heaping tablespoon of the chicken salad on the cucumber, lay another piece on top.
  5. Add a toothpick to hold it together.
  6. Place kalamata, black or green olives through the top of the toothpick to pretty it up!
  7. Keep refrigerated until ready to serve.

About Brenda

Hi! Welcome! My name is Brenda and I am a mom to 3 beautiful children, a puppy and a picky husband who I absolutely adore after almost 15 years! Over the course of the last 25 years of my life, (Yikes I'm feeling OLD!) and numerous diet failures, yo-yo-ING weight, crying and praying to God for a solution to maintain a healthy weight and stop the cravings, I have come to the decision that I simply cannot have certain sugars in my life! (To read my full story see, MY SUGAR-FREE JOURNEY.) YES, it is true, no white sugar and other products that contain it. BUT that has not stopped me from enjoying this life! My passion is cooking and I love entertaining friends and family, which makes it pretty cool that I can always try out new, healthy (insert sneaky laugh here) recipes on them!! SO finally after quite some years experimenting and creating recipes without white sugar and white flour, and receiving requests for these very recipes, this blog has come to be! If you are a woman who has recently lost weight and desires to maintain it, you will find encouragement and fabulous recipes here! If you a mom who is struggling to take that baby weight off, you will find help here! You may not even need to lose weight but you desire healthier recipes for yourself and family, you are at the right place! If you still desire to get to that goal weight (yep, that's me!) but still love to entertain (me again!) and don't know what to make, seek no further-- Sugar-Free Mom is the site for you my friend!
