Maybe you’ve seen some of my other sugar free dessert puddings that use scrambled eggs as the protein source? I’ve got a chocolate egg pudding, a vanilla egg pudding and a banana egg pudding.

Gelatin Swap for Vegans or Vegetarians

If youโ€™re plant-based or vegetarian and want to enjoy this pudding, you can replace the 1 teaspoon of gelatin with ยฝ teaspoon of agar agar powder.

Instructions:

  • Dissolve the agar agar powder into the coconut milk before heating.
  • Bring the mixture to a gentle boil and simmer for 2โ€“3 minutes to fully activate it.
  • Let it cool slightly, then proceed with blending the rest of the ingredients.

Note: Agar sets more firmly than gelatin, so if you prefer a softer, more custard-like texture, you can start with just under ยฝ teaspoon and adjust next time based on your preference.

Can I swap the coconut milk?

If you don’t need this recipe to be dairy free, you can swap the coconut milk with heavy cream. 

Can I use xanthan gum instead of gelatin?

I would not recommend swapping the gelatin with xanthan gum for this particular recipe. 

Can I swap the coconut milk with almond milk?

You could swap the coconut milk with unsweetened almond milk but I haven’t tested this so you may need a bit more gelatin since coconut milk has more fat and helps solidify the pudding. 

Sugar Free High Protein Lemon Pudding

Can I swap the lemon stevia?

If you’re not a fan of using stevia, you can swap it with any sugar free sweetener you prefer. I would recommend any of these liquid sweetener options like Allulose, or Liquid Monk Fruit Sweetener.

I do not recommend any granular low carb sweeteners. Low Carb Confectioners sweetener may work. 

โ€‹Do I have to use fresh lemon juice?

If you don’t have any fresh lemons on hand, you could swap with a very small amount of lemon extract but go easy as it’s strong and powerful.

Sugar Free Low Carb Keto High Protein Lemon Pudding

Super quick and easy to make, this lemon high protein pudding needs just 6 ingredients!

Ingredients

  • 1/4 cup lemon juice and zest
  • 1 tsp gelatin or agar agar, see content above
  • 4 large eggs beaten
  • 1 cup liquid egg whites beaten
  • 1/4 cup unsweetened coconut milk or heavy whipping cream if you don't need dairy free
  • 1 tsp lemon liquid stevia or your favorite low carb sweetener to taste

Instructions

  • Pour lemon juice into a small bowl and sprinkle gelatin over the juice to bloom. Set aside.
  • Place your beaten eggs and egg whites into a large non stick skillet over medium high heat. Scramble until cooked through.
  • Place scrambled eggs and whites into a high speed blender or food processor.
  • Pour in the coconut milk, low carb sweetener and bloomed gelatin. Blend on high speed until smooth, no lumps. Taste and adjust sweetener if needed.
  • Pour into 3 –six-ounce serving jars and refrigerate, 2-3 hours or overnight.
  • Optional topping; lemon zest and a teaspoon of canned coconut cream on top or some fresh berries if desired.
  • Storage: Keep in an airtight container until ready to serve for up to 3 days.
