<h2 class="wp-block-heading">Sugar Free Red Velvet Truffles</h2>



<p>Valentine&#8217;s day is just around the corner! Do you have a special treat planned to make for the loves in your life? </p>



<p>I take every opportunity when a special occasion comes around to make a new sugar free recipe that not only appeals to my sweet tooth, but also can compete with store bought desserts!</p>



<p>I don&#8217;t know how it happened, but my 3 kids think Valentine&#8217;s day is about them. I guess it might be the fact for years I don&#8217;t just give the hubby a homemade gift, I give the kids something too. So I guess that&#8217;s my fault. </p>



<p>But just giving my hubby a treat like these keto red velvet truffles without sharing with the kids, there would be an uproar in my house for sure.</p>

<h1 class="wp-block-heading">Sugar Free Chocolate</h1>



<p>I remember the very first Valentine&#8217;s Day I was newly sugar-free. I really had no clue about anything that might spike blood sugar or had unhealthy ingredients in it and neither did my hubby. </p>



<p>He bought me some store bought sugar-free chocolate candy for Valentine&#8217;s day. I was thrilled, until&#8230;..about an hour later when the stomach cramps began. </p>



<p>I had no idea how Maltitol or other sugar alcohol products worked if you ate more than a little of it and in my body, it was not good.</p>



<p id="isPasted">I ate just one too many of those sugar-free candies! While I was so happy they were sugar-free and it was chocolate and I was desperate after months of no treats at all, portion control was thrown to the wind.&nbsp;</p>



<p>I&#8217;m sure you can imagine the evening wasn&#8217;t spent very romantically.</p>



<p>It was after that horrible learning experience regarding store bought sugar-free candy, that I made the decision to make my own low carb desserts without nasty artificial sweeteners at home.&nbsp;</p>

<p>I did some research and found stevia wouldn&#8217;t cause those adverse side effects. I never realized how artificial sweeteners were still causing me cravings even though I was following a low carb lifestyle. </p>



<p>I felt the sugar cravings were just as bad as when I was eating regular sugar.&nbsp;</p>



<p>I&#8217;ve never looked back once I learned that and so that is how I started using stevia in all my gluten free, sugar free treats, like <a href="https://www.sugarfreemom.com/recipes/sugar-free-keto-hot-cocoa-cookies-with-marshmallow/" data-type="post" data-id="64554">keto cookies</a> and even <a href="https://www.sugarfreemom.com/recipes/vanilla-cream-cheese-frosting-no-sugar-added/" data-type="post" data-id="6710">cream cheese frosting.</a> </p>



<p>I love the fact that you can also find the liquid stevia in many different flavors. Since then I&#8217;ve also added a few more <a href="https://www.sugarfreemom.com/recipes/natural-sugar-free-low-carb-sweeteners-guide-conversion-chart/" data-type="post" data-id="45780">natural sugar free sweeteners</a> to my repertoire, like Allulose, Monk Fruit and erythritol. </p>

<p>It doesn&#8217;t matter to me that I have to make my own special treats for Valentine&#8217;s Day. I&#8217;d rather know what I&#8217;m indulging, made with simple ingredients and isn&#8217;t going to make me sick, especially on Valentine&#8217;s Day.</p>



<p>These are one of the best keto Valentine&#8217;s day dessert around because they are super easy to make, no baking needed and I&#8217;m sure my hubby or yours could easily make them as well!</p>

<h2 class="wp-block-heading">Can I make these cheese cake truffles dairy free?</h2>



<p>Yes if you want to make these dairy free, you certainly can! </p>



<p>Just replace the heavy cream with canned coconut cream and replace the cream cheese with vegan cream cheese. A good choice we&#8217;ve used for my daughter is the Daiya brand.&nbsp;</p>

<h2 class="wp-block-heading">Natural Red Food Color vs Red Dye 40</h2>



<p>​If you really want that deep red color for red velvet desserts, you do need to add a little bit of coloring. </p>



<p>Red dye 40 is an artificial food coloring common in dairy products like ice cream, yogurts and popsicles, sweets like candy, chewing gum and cereals and things like sports drinks, energy drinks and even whey protein powders. </p>



<p>It&#8217;s considered safe by the FDA, but some research has linked it to allergies, migraines and even behavioral problems like ADHD in children.&nbsp;</p>



<p>Since we have lots of allergies from mold, pollen, dust, and my youngest with tree nut and peanut allergies, I stay away from anything with Red Dye 40 in it.&nbsp;</p>



<p>I&#8217;ve found this<a href="https://amzn.to/3OeKwY5" data-type="link" data-id="https://amzn.to/3OeKwY5"> natural food coloring on Amazon</a> and at Whole Foods as a perfect choice to using artificial food coloring and it&#8217;s worked really well to color my baked keto desserts and no bake desserts beautiful red for my low carb red velvet creations!&nbsp;</p>

<p>These amazing grain free, sugar free cheesecake truffles have the creamiest of centers, and all the flavor of raspberry without any seeds getting in your teeth!</p>



<p>When I think of favorite kinds of candy for enjoyment I&#8217;ve always been one to love a soft center. Before I was sugar free ( about 18 years ago now) &nbsp;the hubby would buy me a box of chocolates for Valentines Day. </p>



<p>By the next day or so he&#8217;d look in that box and what do you think he&#8217;d find?</p>



<p>Practically all the candies would have one bite in them. Yep. That&#8217;s how I roll.</p>



<p>I was searching for only the ones I liked and left them flat in the box just like that if they didn&#8217;t appeal me!</p>



<p>When I first went sugar free my hubby was so sweet to buy me a box of Russel Stovers sugars free chocolate candy box for Valentines day. </p>



<p>I had no idea that if you ate too many of those sweetened with Maltitol or Sorbitol, you were headed to some serious GI distress shortly after. </p>



<p>I learned the hard way and decided I&#8217;d never put myself through that agony again. So I created my own delicious Valentine&#8217;s candy with a soft center and no GI distress!</p>

<h3 class="wp-block-heading">Easy Sugar Free Candy</h3>



<p>More often than not I was left dissatisfied with a box of store bought sugar free chocolates. I&#8217;d much prefer a creamy soft candy to a hard or even caramel filled centered candy.<script></script></p>



<p>So this recipe is a little mix of both of my favorites. A soft smooth center and of course CHOCOLATE coated!</p>



<p>While these need to stay refrigerated until ready to serve since they contain cream cheese, they are worth it!</p>

<h3 class="wp-block-heading">How to Avoid Raspberry Seeds in Teeth</h3>



<p>One of the reasons my hubby has ALWAYS hated raspberry anything is because of the tiny seeds that get in his teeth. I, on the other hand love fresh raspberries, and the little tiny seeds don&#8217;t bother me at all.</p>



<p>But I knew when creating this recipe I could not use fresh or frozen raspberries or my man would not even try one bite. Raspberry extract to the rescue!</p>



<p>He has claimed these, &#8220;The Best Dessert you&#8217;ve ever made!&#8221;</p>



<p>From the picky hubby who is a white sugar loving man, that is a pretty good sign you and your family may like these too!</p>

<h2 class="wp-block-heading">How to Make Raspberry Cheesecake Bites</h2>



<h3 class="wp-block-heading">Ingredients</h3>



<p>You need cream cheese, low carb sweetener, heavy cream,<a data-type="URL" data-id="https://amzn.to/3DOtCZW" href="https://amzn.to/3DOtCZW" target="_blank" rel="noreferrer noopener"> raspberry extract</a>, salt, <a data-type="URL" data-id="https://amzn.to/37irPzY" href="https://amzn.to/37irPzY" target="_blank" rel="noreferrer noopener">natural food coloring </a>(optional), coconut oil and <a data-type="URL" data-id="https://amzn.to/3NSbi6E" href="https://amzn.to/3NSbi6E" target="_blank" rel="noreferrer noopener">sugar free chocolate. </a></p>



<h3 class="wp-block-heading">Directions</h3>



<p>In a stand mixer blend the cream cheese and Swerve together until smooth.</p>



<p>Add the cream, stevia, salt and raspberry extract, natural food coloring until combined well.</p>



<p>Slowly add in the coconut oil and continue to blend on high until it&#8217;s incorporated.</p>



<p>Scrape down the edges of the bowl to make sure it&#8217;s all mixed well.</p>



<p>Using a 1- 1/4 inch mini cookie scoop, scoop batter onto a parchment lined baking sheet.</p>



<p>Makes 40 balls. Freeze these for 1 hour before coating with melted chocolate.</p>



<p>Drop one cheesecake bite into melted chocolate at a time and place on parchment lined pan. Refrigerate for another hour.</p>



<p>Must be kept refrigerated until ready to serve.</p>

<p>If you had told me a year ago, I could make a creamy truffle without using cream cheese or any dairy for that matter, I would have called your bluff. I just didn&#8217;t think it was possible or that a dairy free truffle could even compete with a traditional one.</p>
<p>Now don&#8217;t get me wrong here, I&#8217;m a dairy lover all the way. I enjoy dairy products regularly, but I need to limit how much dairy I can have on a daily basis.  I also receive comments from many readers asking how to make some of my recipes dairy free. So today&#8217;s recipe is for all of you who may have allergies to dairy, but even if you don&#8217;t and may be skeptical, I dare you to try them and NOT be shocked at how creamy these are!</p>

<p>I made these for Mother&#8217;s Day at my home this year and many of you know, none of my family is low carb or sugar free. My sister in law and her mother loved these truffles! They felt there was just enough sweetness and they loved the texture.</p>
<p>While my dad (Italian from Rome who loves his bread and pasta) enjoyed the flavor, he&#8217;s not much of a dessert kind of man and said they were too big for him. So he cut one in half, ate half and said, &#8220;Wow these are really good, I&#8217;m going it eat the rest of it!&#8221; I knew if these could pass the picky dad test, we had a winner!</p>

<p>These truffles are a wonderful solution to those times when you need a dessert, have no idea what to make and have little time to make something. They come together so quickly in the food processor. The most time needed is really to let them get cold enough before coating with melted chocolate.</p>

<p>Brenda&#8217;s Notes:</p>
<ul>
<li>These truffles in the pictures are large and I made just 12. But the consensus of my family and friends said they were a bit too large. Use a small cookie scoop and this recipe will make 24 truffles.</li>
<li>You don&#8217;t need the berry flavored stevia, you can use plain stevia or vanilla flavor, but it adds a bit more berry flavor than simply just using the extract.</li>
<li>I&#8217;ve given the nutrition info using 85% dark chocolate as it has lower carbs in it than using sugar free chocolate such as the brand Lily&#8217;s Sweets. I don&#8217;t feel there is a difference in taste in using either chocolate but if you want less carbs , the 85% is the way to go.</li>

<p>Just something about chocolate around Valentine&#8217;s Day that gets everyone excited. Although it doesn&#8217;t have to be &nbsp;Valentine&#8217;s day to enjoy these little chocolatey truffles.</p>



<p>There an are an easy crowd pleaser and family favorite!</p>



<p>If you&#8217;re not a fan of mint you can certainly leave it out and these will just be chocolate truffles, but adding a little peppermint extract and my favorite liquid stevia from <a href="https://www.sweetleaf.com" target="_blank" rel="noopener">Sweetleaf</a> jazzes up the typical truffles from ordinary to extraordinary!</p>
