Easter candy you can feel good about letting your kids have and of course you can sneak a piece or two as well for all that hard work into making them right? 😉
When stored at room temperature they do tend to soften but will not melt so they can be hidden in little plastic Easter eggs for your kiddies to find!

No Bake Chocolate Coconut Bunnies
- ¾ cup softened coconut butter
- 3 tablespoons coconut oil
- 2 tablespoons cocoa powder unsweetened
- 1 teaspoon pure vanilla extract
- 1 teaspoon vanilla liquid stevia
- In a microwaveable bowl melt coconut butter with coconut oil.
- Whisk in cocoa powder.
- Stir in vanilla extract and stevia.
- Pour into silicone bunny molds.
- Refrigerate or freeze until hardened about 30 minutes to an hour.
- Store at room temperature or freeze or refrigerate until ready to serve.
What a great recipe to make your own chocolate. I am trying to gradually eliminate dairy from my diet. However I would prefer to use xylitol instead of stevia. Do you have any idea how I can convert the measurements?
Can I replace the coconut butter with, peanut butter, almond butter, or cacao butter?
I've not tried it, my boys have nut allergies but it sounds like a great idea!
Hi. I just tried making these and the liquid stevia gave them an awful bitter/alcohol taste. I don't have much experience with the liquid stevia-second time I've used it with the same results both times. Am i using the wrong kind? I so wanted these to turn out!

It could have been the stevia you used, not all brands are created equal. If there's a burning or cooling sensation the brand you have may have erythritol in it perhaps? Are there any substitutions for the coconut butter or coconut oil? Or, do they have a strong coconut flavor? I'm really not a fan of coconut, but would like to try making these.
The chocolate masks the coconut flavor so I don't believe you will notice. You could try peanut butter for the coconut butter however I would keep the coconut oil because it is what makes the bunny solidify.
Could the coconut butter be replaced by peanut butter?
No because coconut butter actually solidifies at room temperature but peanut butter does not.

You can google making coconut butter, it's fairly simple but I've never tried it myself.
Do you think you could use regular powder stevia? or only liquid?
You could use powdered, not sure how much, taste test. I like the liquid as it absorbs quickly and the flavor is fantastic!
